Ingredients

  • 1 cup sugar
  • 1/2 cup softened butter
  • 2 Lg. eggs
  • 1 tsp. vanilla extract
  • 1/4 cup buttermilk
  • 2 cups all-purpose flour (or soft white wheat flour if you're milling your own.)
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 cup chopped walnuts
  • 2 cups peeled and diced tart apples - about 2 med. sized apples (granny smith work great.)

Streusel Topping

  • 1/4 cup cold butter cut into cubes
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour
  • 2 tsp. cinnamon

Instructions

  1. Pre-heat your oven to 350 degrees.

  2. Peel and dice apples and set aside.

  3. In a mixing bowl mix together flour, salt, baking soda and baking powder and set aside.

  4. In a mixer with a paddle attachment, beat the butter and sugar together until light and fluffy. Add each egg one at a time until will blended. Slowly pour in the buttemilk and vanilla and mix until incorporated.

  5. With a cup at a time add in the flour mixture and mix until combined.

  6. Fold in the diced apples and chopped walnuts and pour into a greased 9x5 in. loaf pan.

  7. To make the topping use a food processor and pulse until mixture becomes crumbly. Sprinkle on top of the bread batter.

  8. Bake in the oven for 50-60 minutes or until a toothpick inserted into the middle comes out clean. Let it rest in the pan for about 10 minutes and then take it out to finish cooling on a cooling rack. Slice and enjoy!
