Pumpkin Pecan Cobbler

Ingredients

  • 2 cups + 6 tbsp. soft white wheat flour or all-purpose flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 cups granulated sugar
  • 1 tsp. cloves
  • 1 tsp. nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 1/2 cup butter, metled
  • 1 tbsp. vanilla extract

Pecan Topping

  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1/2 cup pecans, chopped
  • 3 cups hot water

Instructions

  1. Preheat oven to 350 degrees.

  2. In a bowl, whisk flour, baking powder, salt, sugar, and spices together and set aside.

  3. In a smaller bowl, whisk milk, pumpkin, melted butter and vanilla together until combined.

  4. Pour wet ingredients into the dry ingredients and stir until combined. Pour batter into a 9x13" baking pan with high sides or into 8 individual baking dishes.

Make Pecan Topping

  1. Mix both sugars together with the chopped pecans and evenly spread over the pumpkin batter.

  2. Pour very hot water over the batter and pecan mixture. Resist stir together.

  3. Place in the oven and bake for 40 minutes or until the center is set. *If baking in individiual pans, bake for 30-35 minutes or until set in the center.*

  4. Cool in the pan for 5 to 10 minutes and serve with a scoop of ice cream.
