It’s summer which means cookouts and days spent in the sun. This blackberry and mint Prosecco splash is the quintessential summer cocktail!

Summer is here and so is all of the great summer cookouts and get-togethers. One of my favorite things about the season has always been that we see our good friends a little more and we all seem to slow down a bit. Fruit cocktails were made for summer and this blackberry & mint Prosecco splash is a quintessential cocktail for the season! If Prosecco isn’t your drink don’t worry. I’ve joined several friends to bring you our favorite drinks of the season. There’s something for everyone!

Is there anything more refreshing than mint and berries paired with a little bubbly? You could easily swap the blackberries for blueberries or raspberries and for a stronger mint flavor use loose mint leaves. Feel free to make it your own!

Blackberry & Mink Prosecco Splash

Course Drinks

Servings 4

Ingredients

1/3 cup Blackberries + a few for a garnish
1/3 cup Water
1/3 cup Granulated Sugar
1 bottle Prosecco of Choice
A Few Fresh Springs of Mint

Instructions

Using a small sauce pan, heat the water, sugar and blackberries until it begins to boil. Stirring constantly. Continue to simmer on low for 10 more minutes.
Remove the blackberry syrup from the burner and allow to cool completely.
Spoon 2 Tbsp. of the blackberry syrup into the bottoms of each glass.
Pour chilled Prosecco over the syrup in the glass and garnish with two blackberries and a sprig of fresh mint. Feel free to add ice or use loose mint leaves instead of a sprig if you prefer.
Sip and Enjoy. Cheers!

I made sure to chill the Processo and blackberry syrup first. You could also fill your glass with ice if needed.

You can add as many blackberries and mint as you want. Isn’t the pink color pretty? While I’m usually just a Pinot Grigio kinda gal, do love the occasional cocktail and this one has become a favorite of mine. What’s your favorite summer drink?
