This mini skillet chocolate chip cookie for two is the perfect dessert for you and your significant other this Valentine’s Day. Serve it right out of the oven with a big scoop of ice cream and enjoy!
One of my all time favorite desserts is a piping hot cookie with ice cream! That love goes all the way back to my childhood. When I was growing up my family used to dine at a restaurant that had a skillet cookie and ice cream on their menu. Sometimes my brother and I were allowed to get one after we ate dinner and it was truly delicious. As an adult I’ve made skillet cookies on many occasions. When my son recently requested one I knew that it would be the perfect Valentine’s Day treat for us.
I love that this particular recipe can be made in just a mixing bowl with a spatula. No need to break out the mixer. You can easily double this recipe for a 12″ skillet cookie to feed the whole family.
Skillet Chocolate Chip Cookie For Two
Ingredients
- 1/2 cup all-purpose flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp. vanilla extract
- 1 egg yolk
- 1/4 cup butter (melted)
- 1/4-1/2 cup semi-sweet chocolate chips
- small handful of m&m's (optional)
Instructions

Preheat your oven to 350°F and generously butter a 6" cast iron skillet. You could also use a regular 6" cake pan instead, just adjust the baking time.

Whisk together the flour, baking soda and salt in a bowl and mix well with a whisk until well combined; set aside.

In a separate mixing bowl, combine the granulated sugar, brown sugar and vanilla extract. Add the melted butter and stir with a fork until well combined.

Add the egg yolk, stir well, and then stir in the flour mixture. Mix until completely combined, then stir in the chocolate chips.

Transfer the cookie dough to the cast iron skillet and spread out evenly across the skillet. Add your M&M's by pressing them into the top of the cookie dough.

Bake for about 18-20 minutes, or until the edges are puffed and browned and the center appears set.

Remove from the oven and press a few additional chocolate chips across the surface of the cookie, if desired; allow to cool for about 5 minutes.

Top with a large scoop of vanilla ice cream and enjoy!
